  • 1 cup sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder

  • ½ teaspoon ground ginger
  • ½ teaspoon ground cardamom
  • ¼ teaspoon ground cloves
  • ¼ teaspoon black pepper
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, cinnamon, ginger, cardamom, cloves, black pepper, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  6. Fill each cupcake liner about two-thirds full with batter.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let them cool before frosting.

Ensure all ingredients are at room temperature for better mixing. Don’t overmix the batter; combine until just mixed to keep the cupcakes light and fluffy.
