Delightful dessert bars combining caramel, tart apples, and creamy cheesecake, perfect for autumn gatherings.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup packed brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 medium apples, peeled and thinly sliced
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup caramel sauce

Instructions

  1. Preheat oven to 325°F (163°C). Line a 9×9-inch square baking pan with parchment paper or grease it.
  2. Mix graham cracker crumbs, brown sugar, cinnamon, and salt in a medium bowl. Pour in melted butter and mix until resembling coarse crumbs.
  3. Set aside 1/3 of the mixture for topping and press the rest into the bottom of the pan to form the crust.
  4. Bake for about 10 minutes, then cool slightly.
  5. Toss sliced apples with lemon juice, granulated sugar, and cinnamon.
  6. Spread the spiced apple slices over the warm crust.
  7. Beat cream cheese until smooth, gradually add sugar, then add eggs one at a time, and vanilla.
  8. Pour cheesecake batter over apples and smooth it out.
  9. Sprinkle remaining crumb mixture over the cheesecake.
  10. Bake for 45–50 minutes until cheesecake is set and topping is golden.
  11. Let cool completely, then refrigerate for at least 3 hours or overnight.
  12. Slice into squares and drizzle with caramel sauce. Serve chilled.

Notes

For best results, use softened cream cheese and chill bars properly before serving.
