Ingredients

  • 1 can (14.5 ounces) diced tomatoes
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth

  • Optional: herbs like thyme or parsley for added flavor

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat.
  2. Add the chopped onion and cook until soft, about 3–5 minutes.
  3. Stir in the garlic and cook for another minute until fragrant.
  4. Add the carrots, chopped cabbage, diced tomatoes, and broth.
  5. Bring the soup to a boil, then lower the heat and simmer for 20–30 minutes.
  6. Season with salt, pepper, and any herbs you choose to add.

Notes
