Ingredients

  • 12 oz spaghetti
  • 3 cups cherry tomatoes
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1/2 cup mascarpone cheese
  • 1/4 cup grated Parmesan
  • Salt and black pepper, to taste
  • Pinch of red pepper flakes (optional)
  • Fresh basil leaves, for garnish

Instructions

  • Bring a pot of salted water to a boil and cook spaghetti until al dente. Reserve 1/2 cup of pasta water.
  • Heat olive oil in a large skillet over medium heat. Sauté garlic until fragrant.
  • Add cherry tomatoes to the skillet and cook until they burst, about 6–8 minutes. Gently press some to release juices.
  • Reduce heat, stir in mascarpone, and season with salt, pepper, and red pepper flakes.
  • Toss the cooked spaghetti into the sauce, adding reserved pasta water as needed to loosen the sauce.
  • Serve hot, garnished with Parmesan and fresh basil.

Notes

  • For extra flavor, add a splash of white wine while cooking the tomatoes.
  • Whole wheat or gluten-free pasta works just as well.
