Bold and tangy Buffalo Cauliflower Bites that satisfy the spicy snack craving without deep frying. Perfect for game day or a fun starter.

  • 1 large head cauliflower, cut into bite-size florets
  • 1/2 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1/2 cup water or milk (dairy or non-dairy)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon neutral oil (optional)
  • 1/2 cup Buffalo sauce
  • 2 tablespoons melted butter or neutral oil
  • To serve: ranch or blue cheese dressing, celery sticks, green onions (optional)

Instructions

  1. Heat the oven to 425°F (220°C). Line a large baking sheet with parchment and lightly oil it.
  2. Cut cauliflower into small, even florets so they cook at the same rate. Pat dry.
  3. In a bowl, whisk flour, cornstarch, garlic powder, onion powder, paprika, salt, pepper, and water or milk into a smooth batter.
  4. Add florets to the bowl and toss to coat. Let extra batter drip off so the layer is thin.
  5. Spread florets on the baking sheet in a single layer. Drizzle or mist with the 1 tablespoon oil.
  6. Bake for 20 minutes, flip, and bake 5–8 more minutes until edges are golden and crisp.
  7. Mix buffalo sauce with melted butter or oil. Toss hot florets in the sauce, return to the sheet, and bake 5–7 minutes to set the glaze. Serve with ranch or blue cheese and celery.

Notes

These bites are easy to scale for a crowd and can be made mild or extra hot. Also, they store well for easy leftovers.
