Ingredients

  • Fresh tomatoes
  • Onion
  • Garlic
  • Vegetable or chicken broth
  • Olive oil

  • Pepper
  • Basil
  • Cheddar cheese
  • Flour
  • Baking powder
  • Milk or a dairy alternative
  • Butter

Instructions

  1. Chop the tomatoes, onion, and garlic.
  2. In a pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
  3. Stir in the chopped tomatoes and broth. Let it simmer for about 20 minutes.
  4. Use an immersion blender to puree until smooth. Season to taste.
  5. In a bowl, mix flour, baking powder, and cheese. Add milk and melted butter, stirring until combined.
  6. Drop spoonfuls of the dough into the simmering soup. Cover and cook for about 10 more minutes until fluffy.

Notes

Store leftovers separately in airtight containers; in the refrigerator for up to 3 days. Reheat on the stove, adding water or broth to loosen if needed.
