This quick stir fry is bold, fresh, and simple, featuring ground chicken and crisp-tender cabbage in a savory sauce.

Ingredients

  • 1 lb ground chicken
  • 1 small green cabbage, core removed and thinly sliced (about 6 cups)
  • 1 medium onion, thinly sliced
  • 2 medium carrots, julienned or thinly sliced
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons neutral oil (canola, avocado, or vegetable)
  • 3 green onions, sliced
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon sesame seeds (optional, for garnish)
  • Sauce:
  • 3 tablespoons soy sauce (use low-sodium if you like)
  • 1 tablespoon oyster sauce (or hoisin for sweeter notes)
  • 1 tablespoon rice vinegar (or lime juice)
  • 1 tablespoon brown sugar or honey
  • 1/4 teaspoon white or black pepper
  • 1/4–1/2 teaspoon red pepper flakes or a squeeze of sriracha
  • 2 teaspoons cornstarch mixed with 2 tablespoons water (optional, for thicker sauce)

Instructions

  1. In a small bowl, whisk soy sauce, oyster sauce, rice vinegar, sugar, pepper, and red pepper flakes. Stir in the cornstarch slurry if using. Set aside.
  2. Prep the vegetables: thinly slice the cabbage and onion; julienne the carrots; mince the garlic and ginger; slice the green onions.
  3. Heat a large skillet or wok over medium-high heat. Add 1 tablespoon oil, then the ground chicken. Cook, breaking it up, until lightly browned and cooked through, 5–6 minutes.
  4. Push the chicken to the sides. Add the remaining 1 tablespoon oil, then the onion and carrots. Stir-fry until slightly tender, 2–3 minutes.
  5. Add garlic and ginger. Cook until fragrant, about 30 seconds.
  6. Add the cabbage. Stir-fry over medium-high heat until wilted but crisp-tender, 4–6 minutes. Pour in the sauce and toss. Cook 1–2 minutes until glossy and slightly thick.
  7. Turn off the heat. Stir in sesame oil and most of the green onions. Taste and adjust seasoning. Garnish with sesame seeds and the rest of the green onions. Serve hot over rice, noodles, or in lettuce cups.

Notes

Use high heat and a wide pan for best results. Leftovers can be reheated easily without losing flavor.
