  • 1 cup assorted berries (fresh or frozen)
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Combine the rolled oats, cinnamon, and salt in a large mixing bowl.
  3. Mix the honey (or maple syrup), melted coconut oil, and vanilla extract in another bowl until well blended.
  4. Pour the wet ingredients into the dry ingredients and stir until fully combined.
  5. Fold in the berries gently, ensuring they are evenly distributed throughout the mixture.
  6. Spread the mixture evenly in the prepared baking pan and bake for 20-25 minutes.
  7. Allow cooling in the pan for about 10 minutes before lifting out and slicing into bars.

For a vegan option, use agave syrup instead of honey. To make these bars gluten-free, use certified gluten-free oats.
