  • 1/2 cup whole milk, warmed
  • 1 package (2 1/4 tsp) active dry yeast
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 3 1/2 cups all-purpose flour (plus extra for dusting)
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup brown sugar, packed (for filling)
  • 2 tsp ground cinnamon (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 4 oz cream cheese, softened (for frosting)
  • 1/4 cup unsalted butter, softened (for frosting)
  • 1 cup powdered sugar (for frosting)
  • 1/2 tsp vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. In a small bowl, mix warm milk with yeast and 1 tbsp sugar. Let sit until foamy.
  2. In a large bowl, whisk together mashed bananas, melted butter, sugars, egg, and vanilla.
  3. Pour yeast mixture into banana mixture. Whisk flour, salt, and cinnamon in a separate bowl, then combine with the wet ingredients to form a soft dough.
  4. Knead on a floured surface for 6-8 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm area for 1-1.5 hours until doubled.
  6. Combine brown sugar and cinnamon in a bowl. Keep softened butter handy.
  7. Punch down dough, roll into a rectangle of 16 by 12 inches.
  8. Spread softened butter over dough, sprinkle cinnamon sugar mixture on top.
  9. Roll dough tightly from the long side, pinch seam closed.
  10. Slice the log into 12 equal pieces.
  11. Place rolls cut-side up in a greased dish, let rise for 30-45 minutes until puffy.
  12. Preheat to 350°F (175°C).
  13. Bake rolls for 25-30 minutes until golden brown.
  14. Beat cream cheese and butter until smooth; add powdered sugar, vanilla, and salt until creamy.
  15. Spread frosting on warm rolls.
  16. Enjoy warm with coffee or tea.

Notes

Ensure your milk is warm but not too hot; this will help activate the yeast properly. Proper kneading helps to develop the dough’s structure. Optionally, add nuts or chocolate chips into the filling for added flavor.
