Delicious bite-sized muffins packed with the flavors of a traditional omelet, perfect for busy mornings.

Ingredients

  • 6 large eggs
  • 1 cup of milk
  • 1 cup of shredded cheese (like cheddar or mozzarella)
  • 1 cup of chopped vegetables (such as bell peppers, onions, or spinach)
  • Salt and pepper to taste
  • Optional: cooked meat like ham or bacon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray.
  2. In a large bowl, whisk together the eggs and milk until well combined.
  3. Stir in the cheese, chopped vegetables, salt, and pepper to the egg mixture.
  4. Pour the mixture evenly into the muffin tin, filling each cup about 2/3 full.
  5. If using, sprinkle cooked meat on top of the mixture in the muffin cups.
  6. Bake in the preheated oven for 20-25 minutes or until the muffins are set and golden on top.
  7. Let them cool for a few minutes before gently removing them from the tin and serve warm.

Notes

Adjust the baking time slightly based on your oven for perfect muffins. They can be stored in the fridge for up to a week.
