  • 500g all-purpose or bread flour
  • 350ml water (room temperature)
  • 100g active sourdough starter
  • 10g salt

Instructions

  1. In a large bowl, combine the flour and water. Stir until no dry flour remains. Let it rest for about 30 minutes (autolyse).
  2. Add the sourdough starter and salt to the dough. Mix well until fully incorporated.
  3. Cover the bowl with a damp cloth and let it rise at room temperature for 4-6 hours, performing stretch and folds every 30 minutes for the first 2 hours.
  4. Turn the dough out onto a lightly floured surface and shape it into a round loaf.
  5. Place the dough in a floured proofing basket or bowl, cover it, and let it rise again for about 2 hours.
  6. Preheat your oven to 450°F (230°C) with a Dutch oven inside, about 30 minutes before baking.
  7. Carefully transfer the loaf into the hot Dutch oven, cover it, and bake for 30 minutes.
  8. Remove the lid and bake for an additional 15-20 minutes until golden.
