  • 1 teaspoon vanilla extract
  • 1 cup grated apple (peeled, cored)
  • Caramel sauce (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together sugar, brown sugar, vegetable oil, eggs, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the grated apple gently so it remains chunky.
  6. Fill each cupcake liner about two-thirds full with batter.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Once cooled, top each cupcake with caramel frosting.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend. You can also add walnuts or raisins for extra texture.
