Delightful bite-sized treats that combine the creamy goodness of cheesecake with the comforting taste of apples, perfect for any occasion.

Ingredients

  • 2 medium-sized apples (preferably Granny Smith)
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Pre-made mini phyllo pastry cups or cookie dough for the crust
  • Optional: caramel sauce for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using phyllo pastry cups, place them on a baking sheet. If using cookie dough, roll out and cut into small circles to fit into muffin tins.
  3. In a mixing bowl, combine the softened cream cheese, sugar, vanilla, and cinnamon. Mix until smooth and creamy.
  4. Core and chop the apples into small pieces. Add them to the cream cheese mixture and stir gently.
  5. Fill each pastry cup or cookie dough shell with the apple cheesecake filling.
  6. Bake for 15-20 minutes or until golden and set.
  7. Allow to cool slightly, then drizzle with caramel sauce if desired.

Notes

For a lighter version, use low-fat cream cheese. For gluten-free, use gluten-free cookie dough or serve the filling on its own, topped with apple slices. Consider adding chopped nuts or dried cranberries for extra texture.
