Ingredients

  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup
  • 1/4 cup melted butter
  • 1/4 cup Greek yogurt
  • 2 large eggs
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup sliced almonds (for topping)

Instructions

  • Preheat oven to 350°F and line an 8×8 inch pan with parchment paper.
  • In a large bowl, whisk melted butter, yogurt, eggs, maple syrup, and almond extract.
  • In a separate bowl, combine almond flour, protein powder, brown sugar, baking powder, and salt.
  • Fold dry ingredients into wet until just combined.
  • Pour batter into prepared pan and smooth the top.
  • Sprinkle sliced almonds evenly over the batter.
  • Bake for 20–25 minutes, until edges are set but center is still slightly soft.
  • Cool completely before slicing into squares.

Notes

  • Store blondies in an airtight container for up to 4 days.
