Air Fryer Hibachi Chicken & Vegetables

A delicious and convenient way to enjoy hibachi-style chicken and vegetables right at home using an air fryer.

Ingredients

  • 3 boneless, skinless chicken breasts (trimmed of fat, and cut into chunks)
  • 2-3 medium zucchini (thickly sliced, then cut into quarters)
  • 2-3 medium yellow squash (thickly sliced, then cut into quarters)
  • 12 oz white button mushrooms (washed & quartered)
  • Salt & pepper (to taste)
  • 3 tbsp minced garlic
  • 1/3 cup olive oil (+ 2 tbsp)
  • 1/4-1/3 cup soy sauce
  • 1 1/2 tbsp rice wine vinegar
  • 1 tbsp sesame oil
  • 1 tsp garlic powder

Instructions

  1. Add all ingredients, except the 2 tablespoons of olive oil, to a large mixing bowl and stir together until evenly combined.
  2. Transfer the mixture to the basket of your air fryer, spreading it out into an even layer. Drizzle the remaining 2 tablespoons of olive oil evenly over the mixture.
  3. Cook at 375°F for 15 minutes.
  4. Serve with steamed white rice and yum yum sauce.

Notes

Cut vegetables into similar sizes for even cooking. Preheat the air fryer if required by your model. For extra flavor, let the chicken marinate in the sauces for an hour before cooking.
